I found this recipe for corn and black bean salad on one of those clear produce bags at the store. I strongly dislike cilantro, but we like everything else so I decided to give it a try (minus the cilantro). It was very good. It wasn’t what I expected, but David and both liked it and we will make it again.

Corn and Black Bean Salad

Ingredients

  • 1 can (14-1/2 oz) black beans, drained and rinsed
  • 1 cup frozen whole kernel corn, cooked and drained
  • 1 medium red onion, diced
  • 2 tbsp chopped fresh cilantro
  • 1 red bell pepper, chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp vegetable oil
  • 1/4 tsp salt

Directions

  1. Combine all ingredients in medium bowl and mix well.
  2. Serve at room temperature as a side dish or over warm tortilla wedges as an appetizer.

Super Easy Crockpot Chili

This is a tasty and simple chili to make in the crockpot. I keep all of the ingredients in my pantry so I can make it at any time.

We like this chili served with shredded cheddar cheese on top and tortilla chips on the side for scooping. The last time I made it I used 2 cans of chili beans to make the batch larger so I would have more to freeze. Enjoy!

Super Easy Crockpot Chili

Ingredients

  • 1 envelope of McCormick Chili Seasoning
  • 1-30.5 ounce can of Brooks chili beans
  • 1 lb ground beef
  • 1 can of Campbell’s tomato soup
  • 1 can of Red Gold tomatoes for chili (no onions or garlic)

Directions

  • Brown meat in fry pan and drain off fat.
  • Mix all ingredients in crockpot.
  • Simmer for several hours on low.

Crockpot Taco Soup is another simple slow cooker recipe. I like to keep the ingredients in my pantry so I can make it at any time. This taco soup goes well with tortilla chips and shredded cheddar cheese.

Crockpot Taco Soup

Ingredients

  • 1 & 1/2 pounds of ground beef
  • 2 cans of corn
  • 2 cans of chili beans
  • 2 cans of diced tomatoes
  • 1/2 package of taco seasoning (I use my own Homemade Taco Seasoning Mix)

Directions

  1. Brown ground beef and drain.
  2. Mix all ingredients in crockpot.
  3. Simmer on low several hours.
