My mother-in-law shared this recipe for Easy Chicken Fajita Soup with me after she served it to us for lunch. It is very easy and tasty. It’s an especially handy recipe since I almost always have these basic ingredients in my pantry.

The choice of salsa definitely impacts the flavor and consistency. I made it the first time with black bean refried beans and it was very good that way. Each choice of ingredient will impact the final outcome. 

Easy Chicken Fajita Soup

Ingredients

  • 1 can refried beans
  • 1 can chicken broth
  • 1 can black beans, rinsed
  • 1 can corn, drained and rinsed
  • 16 oz jar of salsa
  • 1 and 1/2 to 2 cups of cooked chicken

Directions

  1. Mix refried beans and chicken broth well in Dutch oven or large pot.
  2. Add black beans and corn.
  3. Stir in salsa and chicken.
  4. Heat, stirring occasionally.
  5. Serve with or without shredded cheddar and/or sour cream.

When I was growing up, this was always called Tinfoil Delight in our home. I have no idea where that name came from and I don’t really see it in use for this recipe online. In Girl Scouts and Boy Scouts, it is generally called a hobo dinner because it’s cooked in foil over an open fire.

Hobo dinner is not high cuisine, but it always tastes so good! It’s probably because it’s made of basic comfort foods that go together well. Before Caroline was born, David and I would often throw these together when we were busy with a large client project and we didn’t want to eat out or take the time to make a more involved meal. It takes just a few minutes to assemble and it cooks itself. As an added bonus, there was very little clean-up.

This is also a great choice if you are trying to cut your grocery budget. It requires very few ingredients to make. Another win!

Hobo Dinner

Ingredients

For each serving you will need:

  • 1 ground beef patty
  • 1 or 2 medium potatoes, peeled and sliced
  • 1 or 2 carrots, peeled and cut into sticks (approximately 6-8 sticks per carrot)
  • 1 small onion, peeled and quartered
  • pepper
  • seasoning salt
  • garlic salt
  • 2 Tbsp butter

Directions

  1. Place the beef patty in the center of a piece of aluminum foil approximately 14 inches long. Sprinkle with pepper, seasoning salt, and garlic salt.
  2. Lay the potatoes, carrots, and onions on top of and around the patty. Sprinkle vegetables with more seasoning.
  3. Put the butter patties on top of the whole pile.
  4. Pull up the sides of the aluminum foil to enclose everything in a foil pouch.
  5. Place the pouch on a jelly roll pan (just in case it leaks) and cook for approximately one hour at 350 degrees.

We enjoy eating the patty with steak sauce. Yum!

Bedeviled Bacon

My brother recently mentioned bedeviled bacon on Gab. I realized that he didn’t give the full list of ingredients the way my mom made it so I typed them up to share.

This bedeviled bacon combination of ingredients might sound strange, but it is so good! It really is addicting!

Bedeviled Bacon

Ingredients

  • 1 egg
  • 1/2 tsp dry mustard
  • 1/2 tsp cayenne pepper
  • 1 tsp cider vinegar
  • 4 slices bacon
  • 3/4 cup cracker crumbs

Directions

  1. Preheat over to 400 degrees.
  2. Slightly beat egg.
  3. Stir in mustard, cayenne pepper, and vinegar.
  4. Dip bacon in egg mixture and then in cracker crumbs.
  5. Bake on cookie sheet for 20 minutes at 400 degrees.

Tip: I have not made this in a long time, but I think I remember putting aluminum foil on the cookie sheet for ease of clean-up. Turn up the edges of the foil a bit to catch any of the bacon grease that will accumulate while cooking.
