I am starting to think the cool weather is never coming! It is 87 degrees right now which is amazingly warm for Michigan in September. I thought I would share a great recipe for folks who are still “enjoying” the warm weather.
We enjoy chicken quesadillas a lot! They are super easy to make once you get a recipe that works for you.
I don’t have a formal written recipe, but here is how I do it using the shredded salsa chicken I make ahead.
This lemon herb honey marinade is my favorite marinade for grilling boneless chicken. It’s so easy to make and makes the chicken incredibly flavorful.
I often have David grill up a whole bunch of chicken breasts at one time. I then freeze the extras for eating later or putting on Chicken Caesar Salad. Enjoy!
