I believe this is a Country Woman magazine recipe I found on a discussion board somewhere. I made these pecan pie mini muffins for the first time a few weeks ago and they are YUMMY. Pecan pie is one of my favorite desserts ever and these just about meet that craving.
The next time I make them I will add a touch of salt and vanilla. Most baking tastes better with at least a tiny bit of salt. These muffins are even better the second day and freeze well.
Pecan Pie Mini Muffins
Ingredients
- 1 cup packed brown sugar
- 1/2 cup flour
- 1 cup finely chopped pecans
- 2/3 cup butter, melted (no substitutes)
- 2 eggs
Directions
- In a bowl, combine brown sugar, flour and pecans; set aside.
- Combine butter and eggs in bowl; mix well.
- Stir into flour mixture just until moistened.
- Fill greased and floured miniature muffin cups 2/3 full.
- Bake at 350 degrees for 15-18 minutes or until muffins test done.
- Remove immediately to cool on wire racks.

wow, that sounds so simple and yum and i think i even have a packet of pecans sitting in the pantry that i forgot to use for something else!! 🙂 my free evening at home tonight is sounding very yummy… 😀

I am making these tomorrow…my mouth is already watering. When it says, Remove immediately to cool on wire racks, does that mean remove from the oven immediately or the mini muffin pans? Usually if I don’t let things cool for a few minutes in the pan, they break apart. And I don’t want to ruin these muffins! Thank you!

Jamie – It does mean remove immediately to cool from the pans. I think this is probably because they get a little bit of that crusty stuff on the outside. YUM. I think I did let them sit in the pan for a minute, but not much longer. They do stick together very well out of the pan.
And very important which I forgot! These are good right after you make them but they are SO MUCH BETTER the next day. I also froze them and they froze very well. 🙂
