My mom made these smoked turkey rollups with cucumber and cream cheese for us a few times. I finally asked for the recipe so I could make them at home.
They are very easy and good for days that need something simple but tasty! I buy the tortillas that are low carb and have lots of fiber to make these a healthier item.
Smoked Turkey Rollups with Cucumber and Cream Cheese
Ingredients
- 4 oz cream cheese
- 4 green onions, chopped
- 1/2 cup cucumber, peeled, seeded and chopped
- 1/2 tsp dill weed
- 4 flour tortillas
- 4 oz smoked turkey
Directions
- Combine cream cheese with onions, cucumber and dill weed.
- Spread each tortilla with 1/4 of the mixture. Top with smoked turkey and roll up.
- Makes 4 servings as an entree. The rolls may also be sliced across to make appetizers.
