I had never toasted pumpkin seeds before today. Oh my. These are SO GOOD. I am seriously going to need to buy more pumpkins just to make more of these!
Here is the recipe I adapted for our use. This recipe for toasted pumpkin seeds is so easy and fully of healthy ingredients in including sea salt and extra virgin olive oil. It could not be easier!
Easy Toasted Pumpkin Seeds
Ingredients
- One pumpkin
- Sea Salt
- Extra virgin olive oil
Directions
- Preheat oven to 400°F.
- Remove the seeds and insides from pumpkin. Discard stringy insides.
- Rinse the seeds thoroughly to clean them.
- In a large saucepan, add seeds and water. Use 4 cups of water per cup of seeds. Add salt to water (1 tbsp per 2 cups). Bring to a boil and then simmer for 10 minutes. Drain.
- Spread a tablespoon of olive oil on the bottom of a large roasting pan. Spread the seeds in one layer on the bottom of the pan. Bake for approximately 15-20 minutes or until the seeds begin to brown. Toss seeds every five minutes or so while roasting. When sufficiently browned, remove pan from the oven and let the seeds cool in the pan.
- Eat whole.
