Meatloaf Muffins Recipe

Meatloaf Muffins is currently one of my husband’s favorite recipes. They are tasty and pair so well with many different kinds of potatoes.

One word of advice. Don’t make these in an insulated muffin pan or a pan you plan to use for muffins. I ruined two brand new insulated muffin pans the first time I made these. Oops! The muffins will have juices that tend to overflow so I always put a jelly roll pan on the other rack under them so it doesn’t get all over my oven.




Meatloaf Muffins

Ingredients

  • 2/3 cup bread crumbs
  • 1 cup milk
  • 1 & 1/2 pounds ground beef
  • 2 eggs, beaten
  • 1/2 cup grated onion
  • 1 tsp salt
  • 1/2 tsp sage
  • dash of pepper

Directions

  1. Soak bread crumbs in milk.
  2. Add meat, eggs, onion and seasonings. Mix well.
  3. Drop by spoonfuls into twelve muffin sections, dividing mixture evenly.
  4. Top with piquant sauce (see below).
  5. Bake at 350 degrees for 45 minutes.

Piquant Sauce

Mix the following in a small bowl:

  • 3 Tbsp brown sugar
  • 1/4 cup ketchup
  • 1/4 tsp nutmeg
  • 1 tsp dry mustard

I make a double batch of the sauce. I set aside half of the sauce and put the other half of it on the muffins when I bake them. I warm the other portion in the microwave on high for about 30 seconds to serve with the muffins.
