I had never toasted pumpkin seeds before today. Oh my. These are SO GOOD. I am seriously going to need to buy more pumpkins just to make more of these!

Here is the recipe I adapted for our use. This recipe for toasted pumpkin seeds is so easy and fully of healthy ingredients in including sea salt and extra virgin olive oil. It could not be easier!

Easy Toasted Pumpkin Seeds

Ingredients

  • One pumpkin
  • Sea Salt
  • Extra virgin olive oil

Directions

  1. Preheat oven to 400°F.
  2. Remove the seeds and insides from pumpkin. Discard stringy insides.
  3. Rinse the seeds thoroughly to clean them.
  4. In a large saucepan, add seeds and water. Use 4 cups of water per cup of seeds. Add salt to water (1 tbsp per 2 cups). Bring to a boil and then simmer for 10 minutes. Drain.
  5. Spread a tablespoon of olive oil on the bottom of a large roasting pan. Spread the seeds in one layer on the bottom of the pan. Bake for approximately 15-20 minutes or until the seeds begin to brown. Toss seeds every five minutes or so while roasting. When sufficiently browned, remove pan from the oven and let the seeds cool in the pan.
  6. Eat whole.

Enjoy!

I wonder what the purpose of boiling the seeds are? We never boil them. We just toast them with butter and salt. They are addictive.:)

    Amy,

Boiling them in the salt water infuses the salt flavor into them. Butter and salt sounds good too. It would be interesting to try them both ways… 🙂

Sallie – Thank you so much for stopping by my blog and leaving a note! It’s always fun to see blogs from other places in Michigan. While I like to talk about a lot of different things, I do find myself advertising for Michigan pretty often. We are certainly blessed to live in such a beautiful state. Though I know there are many other breathtaking places on the earth, I have a hard time thinking that many of them can compete with all of our beautiful water and beaches.

    Blessings –
    Val

If you still have any pumpkins around, these are so good!

David and Caroline have been enjoying them recently.

A Christian Nation
