One of my goals this summer is to start finding other foods to eat so I can have more variety in my menus. I decided to try out cornmeal mush and fried cornmeal mush since I can eat corn and the thought of having something fried is very appealing (since it is something I don’t get often). I also really like cornbread which I can no longer eat so I thought this might kind of sort of be connected even though they are completely different. I chose Bob’s Red Mill Organic Medium Grind Cornmeal to have a better chance of success with a quality cornmeal.
I’m not feeling the cornmeal mush thing, friends.
This is the second time I’ve made it.
The first time a few weeks ago I did it on the stovetop and I didn’t cook it long enough. That was clearly my mistake. I didn’t use enough water and it thickened so quickly it didn’t have time to properly cook through.
This time I did it in the crockpot and it turned out really well. Nice and creamy. It looks fantastic.
But I’m just not understanding the enthusiasm for it. Maybe it’s a thing that you love if you grew up with it and you have great memories associated with it?
I tried some with a little maple syrup. It’s not terrible and it would be better than starving (clearly). But that’s about the highest praise I can give it.
I have a bunch of it cooling and will try to fry it tomorrow. That’s really my ultimate goal (as opposed to eating it like a hot bowl of cereal). I’ll have to fill you in on how that goes. I definitely plan on slicing it thin to maximize the crispy fried part.
Do you love cornmeal mush? Is it because you associate it with childhood or a grandma or something?
